  2. 1 cup unbleached flour

  3. 1/4 cup egg substitute (equal to 1 egg)

  4. 1 can (11 ounces) mandarin oranges, drained

  5. 1 teaspoon baking soda

  6. 1/2 teaspoon salt

  7. 2 Tablespoons oil (canola)

  8. 1 teaspoon vanilla Topping:

  9. 2 Tablespoons firmly packed brown sugar

  10. 2 teaspoons skim milk

  1. Preparation: Preheat oven to 350 degrees. Mix sugar, flour, egg substitute, Mandarin oranges , baking soda, salt, oil, and vanilla , mashing the orange, and pour into a 9-inch by 9-inch pan that has been sprayed with non-stick coating. Bake for 30-35 minutes. Topping: Combine sugar and milk. In the microwave, heat on high until mixture starts to boil. Drizzle over hot cake.
