  1. 3 1/2 cups coarsely shredded zucchini

  2. 3 large eggs, beaten

  3. 1/3 cup all-purpose flour

  4. 1/2 cup (2 ounces) shredded Wisconsin Mozzarella cheese

  5. 1/2 cup (2 ounces) finely shredded Wisconsin Parmesan cheese

  6. 1/2 teaspoon basil leaves Filling:

  7. 1 1/2 cups pizza sauce

  8. 1/2 pound sauteed mushrooms

  9. 1/2 pound Italian sausage, cooked, crumbled, drained

  10. 1 cup (4 ounces) shredded Wisconsin Mozzarella cheese

  11. 1/2 cup (2 ounces) shredded Wisconsin Provolone cheese

  1. Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess liquid. For crust, combine zucchini, eggs, flour, cheeses and basil. Mix well and spread into a buttered 13x9 inch baking dish. Bake at 350°F (175°C) for 20 to 25 minutes or until surface is dry and firm. Layer sauce, mushrooms, sausage and cheeses on baked crust. Bake an additional 25 minutes.
