  5. 2 lb Chicken thighs

  6. 1 Lemon grass stalk; chopped

  7. 1 T Fish sauce

  8. 3 T Vegetable oil

  9. 1 md Onion; sliced

  10. 2 Garlic clove; chopped

  11. 3 Scallions; (with tops),

  12. -cut into 1-inch pieces

  13. 2 T Vinegar

  14. 1 T Ginger; finely chopped

  15. 1/4 c ;Water

  16. 1 T Fish sauce; (another one)

  17. 1 ts Cornstarch

  18. 1 ts Sugar

  19. 1/4 ts Red pepper; crushed

  20. Rice; cooked

  21. Remove bones and skin from chicken thighs; cut chicken into 1-inch

  22. pieces. Mix lemon grass and 1 Tbsp. fish sauce in glass or plastic

  23. bowl; stir in chicken. Cover and refrigerate at least 1 hour.

  24. Heat oil in wok or 10-inch skillet until hot. Add sliced onion and 1 minute. Add chicken and scallions; stir-fry

  25. minutes. Reduce heat; cover and cook, stirring occasionally, 2

  26. minutes.

  27. Mix vinegar and ginger root; reserve. Mix remaining ingredients

  28. except rice; stir into chicken mixture. Stir in reserved vinegar

  29. mixture. Heat to boiling, stirring constantly; cook and stir until

  30. thickened, about 1 min. Serve with rice. --
