  1. 1 Onion - finely chopped

  2. 1 tablespoon 15ml Minced celery

  3. 1 Garlic clove - minced

  4. 2 teaspoons 10ml Vegetable oil

  5. 1 tablespoon 15ml Flour

  6. 1 Diced tomatoes - (16 oz)

  7. 1/4 teaspoon 1 1/3ml Dried thyme

  8. 1/8 teaspoon 0.6ml Cayenne pepper

  9. 1 teaspoon 5ml Lemon juice

  10. 1/4 teaspoon 1 1/3ml Hot pepper sauce - (to 1/2 tspn)

  1. Recipe Instructions In a medium skillet, saute the onion, celery and garlic in the oil until soft, about 3 minutes. Add the flour, and saute 1 minute longer. Add the tomatoes and their liquid, thyme and cayenne. Cook until slightly thickened about 5 minutes. Remove from heat and stir in lemon juice and pepper sauce. Cool to room temperature.
