  2. 1 cup diced onions

  3. 1 cup diced celery

  4. 1 cup diced carrots

  5. 1 cup diced mushrooms

  6. 3/4 cup butter

  7. 1/2 cup flour

  8. 1 teaspoon dry mustard

  9. 5 cups chicken or vegetable stock

  10. 1 bunch broccoli

  11. 11 ounces beer

  12. 6 ounces cheddar cheese -- grated

  13. 2 teaspoons grated parmesan cheese

  14. salt

  15. pepper

  1. Saute the diced vegetables in butter. Mix flour and mustard into sautedvegetables. Add the chicken or vegetable stock to mixture and cook for fiveminutes.

  2. Break broccoli into small flowerets; cut stems into bite-sizes pieces.

  3. Steam until tender-crisp.

  4. Add beer and cheeses to the soup. Simmer 10-15 minutes. Check seasonings.

  5. To serve, place some broccoli into a soup bowl and ladle the soup over it.
