  1. 2 c Black turtle beans

  3. 2 tb Fresh Corriander

  8. 1 tb Honey

  9. 4 Bay leaves

  10. 1 Salt and Pepper

  11. 2 c Chicken Stock

  12. 3 Strips of bacon

  13. 2 Diced Celery Stalks

  14. 1 Diced Carrot

  15. 1 c Diced Onion

  16. 1 ts Olive oil

  1. + Directions : Combine all the ingredients and add enough water to cover the beans. Bring to a boil, then reduce to a simmer and cook until beans are thoroughly cooked. Add more water as required. Remove bay leaves and puree the soup in a blender. Then pass the soup through a fine sieve to remove the skins of the beans. To make the Mango Salsa, dice mango, jalapeno pepper and fresh coriander very finely than combine. Add lime juice and olive oil. Serve the soup with a dollop of sour cream and a dollop of Mango Salsa on top of the sour cream.
