1/4 tsp cayenne

1/2 tsp salt

2 tbs white wine

1/2 cup unsalted butter

4 tbs boiling water Ingredients

Salt, cayenne pepper

2 drops lemon juice

2 tsp tarragon vinegar

1/4 pound sweet butter, frozen and cut into 8 pieces

2 large egg yolks

2 tbs light cream Ingredients

1 tbs water

2 tsp lemon juice

100g butter (unsalted)

2 egg yolks

About 500g asparagus spears

Salt & pepper to taste
