  1. Serves 4 2 large sweet potatoes

  2. 2 stalks diced celery

  3. 1 diced red bell pepper

  4. 1 bunch sliced green onions

  5. 1 cup fresh or canned chopped pineapple

  6. 1 cup cooked, chilled barley

  7. 1 cup fat-free mayonnaise

  8. 1/4 cup mango chutney

  9. 1/4 cup chopped fresh mint leaves

  1. Cook the sweet potato cubes until they are just tender. Peel and cut the sweet potatoes into ½ inch cubes. Combine the sweet potato cubes with the remaining ingredients and mix well. Serve chilled.
