  3. 2/3 cup 157ml Milk

  4. 1/2 teaspoon 2 1/2ml Almond extract

  5. 2/3 cup 131g / 4.6oz Sugar

  6. 1 1/2 cups 93g / 3 1/3oz All-purpose flour

  7. 1/2 cup 118ml Toasted wheat germ

  8. 1 teaspoon 5ml Vanilla Rind of half a lemon - grated

  9. 2 cups 292g / 10oz Dried fruit such as apricots, dates, prunes chopped

  10. 2 tablespoons 30ml Flour for dredging fruit Icing sugar for dusting

  1. Recipe Instructions In bowl, cream butter with sugar until fluffy. Beat in eggs, one at a time until incorporated. In another bowl, combine flour, baking powder and wheat germ. Combine milk with vanilla, almond extract and lemon rind. Add dry ingredients to creamed mixture alternating with milk until combined. Fold in flavored dried fruits. Spoon batter into a well-buttered and floured 2-quart tube pan. Bake in a preheated 350'F. oven for 1 hour or until tester inserted in center comes out clean. Let cool for 10 minutes, then turn out cake and let cool on rack.
