  1. 4 large eggs

  2. 2 cups of granulated sugar

  3. 1-1/2 cups of vegetable oil

  4. 3 small jars of carrot baby food

  5. Combine all ingredients with electric mixer. When well blended fold in:

  6. 2 cups of flour

  7. 2 tsp. baking soda

  8. 1 tsp. of salt

  9. 3 tsp. cinnamon

  10. Cream Cheese Frosting:

  11. 4 oz. softened cream cheese

  12. 1/2 tsp. vanilla

  13. 1/2 cup softened butter or margarine

  14. 1-3/4 cups of powdered (10xx) sugar.

  15. Combine all ingredients until smooth. Spread on cooled carrot bars. Let frosting set before frosting.

  1. Pour batter into prepared jelly roll pan or 9x13 inch pan. Bake at 350 degrees for 20-25 minutes or until center springs back when touched. Frost with cream cheese frosting when cool. Cut into bars. Yield: serves 24 Notes: I purchase fall themed jimmies and sprinkle on cream cheese frosting before the frosting sets. it makes these bars look so festive! These are great for bake sales as well.
