  5. 1 1/2 kg Skirt steak

  6. (1 1/2 lb)

  7. 1/4 c Oil

  8. 1 ts Black mustard seeds

  9. 1/2 ts Fenugreek seeds

  10. 6 cl Garlic, crushed

  11. 1 tb Ginger, finely

  12. Chopped 3 md Onions,

  13. Finely sliced 1 1/2 ts Turmeric

  14. 2 tb Coriander

  15. 1 tb Cumin

  16. 2 ts Chilli powder

  17. 3 ts Salt

  18. 2 tb Vinegar

  19. 2 ts Garam masala

  20. 2 tb Extra vinegar

  21. 750 g Cubed potatoes (3/4 lb)

  22. 2 tb Fresh coriander

  23. Cut steak into cubes. Heat oil and fry mustard seeds till they

  24. burst. Add fenugreek, garlic, ginger and onion. Fry until onions are

  25. golden. Add turmeric and fry 1 minute. Add coriander, cumin and chilli. Stir well. Add salt and vinegar, and fry until liquid

  26. evaporates. Sprinkle in the garam masala and mix well. Add meat and turn till coated. Add extra vinegar if spices start to stick.

  27. 1 1/2 to 2 hours. Add cubed potatoes

  28. and cover. Cook for a further 20-30 minutes or until potatoes are
