  1. Italian Sausage Veggie soup 2 lb. Italian pork sausage

  2. 1 cup sliced carrots

  3. 1 large baking potato, peeled and cut into 1/2 cubes

  4. 1 clove garlic

  5. 2 (14 1/2 oz) cans beef broth

  6. 1 (15 oz) can garbanzo beans

  7. 1 (14 1/2 oz) can pasta style chunky tomatoes, un-drained

  8. 1 1/2 cups water

  9. 1/2 teaspoon dried italian seasoning

  10. 1 bay leaf

  11. 1 cup zucchini-julienne cut grated fresh parmesan cheese

  12. In a large skillet brown sausage; drain. Place into a crock-pot,

  13. and add all ingredients except zucchini..

  14. Cover; cook on low 7-9 hours

  15. Remove bay leaf, and gently stir in zucchini, cover and cook 30

  16. more minutes.

  17. Serve with grated cheese.
