  1. 1/2 pound day-old country-style bread, sliced 1/4-inch thick

  2. Extra-virgin olive oil

  3. Kosher salt and freshly ground black pepper

  4. 1/2 cup freshly grated Parmesan

  1. Preheat oven to 300 degrees F.

  2. Brush one side of each bread slice with olive oil and place them on a baking sheet in one layer. Season them with salt and pepper and dust them with the Parmesan. Bake until golden brown and crisp , about 15 minutes. Serve warm or at room temperature.
