  1. 3 Ears of Corn

  2. -scraped & coarsely chopped

  3. - frozen corn

  4. 1/2 lb Medium Shrimp

  5. -shelled and deveined,

  6. coarsely chopped 1 ts Chopped garlic

  7. 1/2 c Finely chopped shallots

  8. -OR - Green onions

  9. 1 ts Ground coriander

  10. 1/4 ts Ground cumin

  11. 2 tb Chopped coriander leaves

  12. 2 tb Flour

  13. 1 ts Salt

  14. 2 Eggs; beaten

  15. Peanut or vegetable oil

  16. -for pan-frying -

  17. Sambal Ulek (chili sauce)

  18. -for dipping -

  1. IN A LARGE BOWL, combine corn, shrimp, garlic, green onions, ground coriander, cumin, coriander leaves, flour, salt and eggs.

  2. Heat a thin layer of oil in a skillet over medium-high heat.

  3. Pour 1/4 cup of corn mixture into pan.

  4. Add as many as will fit into the pan with 1/2-inch of space between the fritters.

  5. Fry until golden brown and crisp; turn.

  6. Cook about 1 minute on each side.

  7. Remove and drain on paper towels.

  8. Keep warm while frying remaining fritters.

  9. Serve hot or at room temperature with sambal ulek for dipping.

  10. Serves 6 with other dishes.
