  1. 1 (15-ounce) can refried beans

  2. 1 (15-ounce) can black beans, rinsed and drained

  3. 1 onion, chopped

  4. 2 tablespoons butter

  5. 2 tomatoes, chopped

  6. 2 cups shredded Colby cheese

  7. 12 flour tortillas

  8. 2 tablespoons oil

  1. Preheat oven to 400 degrees F. In bowl, combine refried beans and black beans. In small skillet, cook onion in butter until tender. Add to bean mixsture along with tomateos.

  2. Make quesadillas by placing filling on half of the tortillas. Sprinkle with cheese and top with remaining tortillas.

  3. Place quesadillas on baking sheet; brush tops with oil or spray with baking spray. Bake 10-15 minutes until tortillas are crisp and filling is hot. Cut into quarters to serve. Serves 4-6
