  1. Thai Chicken Salad 2 chicken breasts, poached, grilled or sauteed

  2. 1 medium-size red onion, chopped

  3. 3 green onions including tops, sliced

  4. 3 slices ginger, finely minced

  5. 4 tablespoons chopped cilantro

  6. Thai Vinaigrette Dressing Romaine lettuce leaves

  7. Cut chicken breasts into strips. In a small bowl, mix onion, green

  8. onions, ginger and cilantro. Stir in dressing and chicken strips.

  9. Wrap mixture in lettuce leaves before eating. Makes 2 servings.

  10. 1/4 cup avocado oil

  11. 2 tablespoons hot chili oil

  12. 1 large garlic clove, minced

  13. 1/2 cup rice wine vinegar

  14. 3 tablespoons tamari

  15. 2 dried red peppers or to taste

  16. In a small bowl, combine oils and garlic. In another bowl, whisk

  17. together vinegar and tamari; add to oil mixture. Add peppers.

  18. Makes enough dressing for 4 salads.

  19. Note: Avocado oil is stocked in gourmet supermarkets. Hot chili

  20. oil, rice wine vinegar and tamari are available in Asian markets

  21. and some supermarkets.
