  1. 4 pound(s) Pork Loin

  2. 1 teaspoon(s) garlic powder

  3. 1 teaspoon(s) thyme , dried

  4. 5 medium potatoes

  5. 2 tablespoon(s) olive oil

  6. 1 teaspoon(s) thyme , dried 2 teaspoon(s) chives , dried 5 teaspoon(s) garlic powder

  7. teaspoon(s) salt , to taste teaspoon(s) pepper , to taste

  1. Mix olive oil, garlic powder, onion powder and thyme together. Rub on pork loin. Sprinkle with salt and pepper. Place pork loin in shallow roasting pan. Roast at 325F for 1 1/2 hrs.

  2. Meanwhile, peel and quarter potatoes; cook in boiling water for 10 minutes. Drain, let cool. Place potatoes in large bowl.

  3. Mix olive oil, thyme garlic powder, chives, salt and pepper together. Pour over cooled potatoes and toss until potatoes are well covered with herbs.

  4. Take pork loin out of oven and place potatoes around pork loin and roast an additional 60 minutes or until pork registers at least 160F on meat themometer.

  5. Cover pork with foil and let stand 10 minutes before slicing.
