  5. 2 tb Toasted sesame oil

  6. 2 tb Light soy sauce

  7. 2 tb Tomato juice

  8. 2 tb White wine vinegar

  9. 2 tb Apple or orange juice

  10. 2 c Noodles (eggless); rinsed,

  11. -drained, chilled

  12. 3 c Cabbage or bok choy;

  13. -shredded

  14. 1 c Yellow squash; shredded

  15. 1 c Zucchini; shredded

  16. 1/2 c Daikon or other radish;

  17. 1/4 c Scallions or chives; thinly

  18. -sliced

  19. 1/4 c Carrot; shredded

  20. 1 Garlic clove; minced

  21. 4 ts Sesame seeds; toasted

  22. ds Ground nutmeg

  23. 6 tb Dry-roasted cashews; chopped

  24. Squash or chive blossoms,

  25. -to garnish

  26. To prepare the dressing, combine oil, soy sauce,

  27. tomato juice, vinegar and apple juice in a bowl; mix

  28. well. Set aside.

  29. Toss noodles, cabbage, squash, zucchini, daikon,

  30. scallions, carrots, garlic, sesame seeds, nutmeg and reserved dressing together. Garnish with cashews and blossoms if desired.
