  1. 4 whole star anise

  2. 4 3" cinnamon sticks

  3. 12 whole clove s

  4. 24 cardamom pods

  5. 1 6" fresh ginger , peeled & sliced

  6. 2c pure maple syrup

  7. 1 gallon apple cider

  8. 6c chilled seltzer

  1. Bring spices, ginger, syrup, and 1 cup of water to a boil in a small saucepan. Reduce heat to medium-low, and simmer 8-10 minutes. Let stand at room temperature 1 hour. Strain, and discard solids.

  2. Stir together spiced syrup and apple cider in a pitcher, and refrigerate until chilled, about 1 hour. Pour spiced cider into punch bowl; stir seltzer.
