Eggnog Cake

Prepare the angel food cake according to package directions.

In a medium bowl, combine cornstarch and a small amount from 1 quart eggnog, mixing until smooth. Add sugar, vanilla, and the rest of the eggnog. Pour into a saucepan and cook over medium heat until the mixture thickens, stirring constantly (about 20 to 30 minutes, or until a spoon can almost stand in the mixture). Remove from stove and let cool for about 20 minutes.

Divide angel food cake into 3 layers and frost with eggnog mixture. Prepare non-dairy topping mix (dry) according to package directions.

Divide and mix in red food coloring or green food coloring. Spread alternately on the sides and top.
