  1. Slice eggplant and dip in beaten egg and coat in breadcrumbs. Heat olive oil in frying pan and brown eggplant on both sides. Spread a layer of sauce in bottom of lasagna pan, add layer of eggplant, layer of mozzarella and repeat until all gone. Finish with mozzarella on top and parmesan cheese. Bake for ½ hour until brown and bubbly. Let rest for 10 minutes before serving.
