  2. to 4 tablespoons chopped fresh herbs 1/2 cup softened butter Herb sprigs Stir herbs into butter. Drop mixture onto waxed paper; refrigerate until firm, forming it int a log shape as it cools. Wrap butter in waxed paper, tying ends. Place sprig of herb on package to identify it. (Butter can be made 1 week ahead and refrigerated or 1 month ahead and frozen.)
