  1. 1 lb Spinach, washed & drained

  2. 1 pn Black pepper

  3. 1/2 ts Salt

  4. 1/2 ts Cumin powder

  5. 2 ea Garlic cloves, chopped

  6. 1 bn Green onions, sliced

  7. 3 tb Olive oil

  8. A few bay leaves

  9. 1 c Lentils

  10. Water/stock as required

  1. Chop the washed spinach.

  2. Boil lentils in 4 cups water with bay leaves until they are soft.

  3. Heat oil in a pot & gently fry the green onions for 2 minutes.

  4. Add garlic & seasonings.

  5. Add spinach.

  6. Mix well & put in cooked lentils.

  7. Add another pint of water or stock & cook for a further 15 minutes.
