  1. 1 onion , chopped

  2. 1/4 cup butter

  3. 1/4 cup all-purpose flour

  4. 1 teaspoon dry mustard

  5. 3 cups chicken broth

  6. 1 cup carrot s, grated*

  7. 3 cups peeled and sliced potato es

  8. 2 cups half-and-half

  9. 3 cups Cougar Gold cheese , shredded Salt and pepper

  1. Sauté the onion in the butter until soft. Stir in the flour and the dry mustard. Cook for several minutes, stirring constantly. Transfer the mixture to a soup pot and stir in the broth, whisking until smooth. Add the carrots and potatoes. Simmer over medium heat for 30 minutes. Add the half-and-half. Reduce the heat to low and add the Cougar Gold cheese and stir until melted. Season with salt and pepper to taste. Sprinkle with parsley.
