  1. Ingredients :Makes 45 cookies

  2. 125 g 100 g 3 1/4 teaspoon 125 g Butter

  3. Sugar

  4. Egg whites

  5. Vanilla essence

  6. Flour

  1. Preheat oven to 180 o C (350 o F).

  2. Using mixer at medium speed, cream the butter and gradually add sugar.

  3. Continue mixing until light and fluffy.

  4. Add egg whites one at a time, beating thoroughly after each addition.

  5. Add vanilla essence.

  6. Sift flour and fold in, blendingthoroughly to form a smooth mixture. Spoon mixture into a pastry bagwith a small frosting tip. Pipe 10cm strips of the batter onto greasedand floured baking trays, about 5 cm apart. Bake each batch in thepreheated oven for about 7 minutes or until the cookies have lightlybrowned edges.

  7. Remove cookies immediately from the bakingtray to prevent sticking.

  8. Transfer to a clean plate and set aside tocool.

  9. If not eating immediately, pack inairtight containers.
