  1. 4 cups frozen shoestring french-fried potatoes (from a 28-oz bag)

  2. 4 well-trimmed 3/4-in.-thick boneless beef rib-eye steaks (8 oz each)

  3. 1/2 tsp pepper

  4. 1/2 cup crumbled blue cheese

  1. Heat oven to 450°F. Line 2 rimmed baking sheets with foil (for easy cleanup) and heat a large stovetop ridged grill pan over medium heat (see Note).

  2. Spread frozen french fries in a single layer on baking sheets. Bake 15 minutes, or until golden and crisp.

  3. Meanwhile, sprinkle steaks with pepper and place on grill pan. Grill 3 minutes. Turn steaks over; scatter blue cheese on top and grill 3 minutes longer, or until an instant-read thermometer inserted from side to middle registers 140°F. Remove and let rest a few minutes (temperature will rise to 145°F for medium-rare).

  4. Note: If you don’t have a large ridged grill pan, use 2 large nonstick skillets.
