  1. 1 cup 237ml Water or beer

  2. 2 cups 320g / 11oz Raisins

  3. 1 cup 160g / 5.6oz Packed brown sugar

  4. 1/3 cup 65g / 2 1/3oz Butter or shortening

  5. 1/2 teaspoon 2 1/2ml Cinnamon and allspice

  6. 1/2 teaspoon 2 1/2ml Salt

  7. 1/8 teaspoon 0.6ml Nutmeg

  8. 2 cups 125g / 4.4oz Cake flour - sifted

  9. 1 teaspoon 5ml Double action baking powder

  10. 1 teaspoon 5ml Baking soda

  11. 1 cup 93g / 3 1/3oz Almonds - chopped -

  15. 1 cup 146g / 5.1oz Dates - chopped

  16. 1 cup 146g / 5.1oz Chopped figs

  17. 1 cup 146g / 5.1oz Chopped citron

  1. Recipe from the Joy of Cooking Comment: the spice level is very subtle. For a spicier version, increase the amount of spice and/or add in some stronger ones such as ginger, anise, cloves.

  2. Preheat oven to 325F.

  3. Boil for 3 minutes the water (beer), raisins, brown sugar, butter, spices, and salt. Cool.

  4. Sift together the cake four, baking powder and baking soda.

  5. Stir the flour gradually into the other ingredients. Stir until smooth. Add almonds. [If making the fruitcake variation, add the remaining ingredients.] Bake in a greased tube pan for 1 hour or more. Frost with caramel icing.
