  1. Gratin Dauphinois

  2. 2 lb floury potatoes

  3. 1 clove garlic

  4. 2 cups milk

  5. 1/2 cup heavy cream

  6. 1 oz butter

  7. 2 eggs

  8. 6 oz grated cheese

  9. 1/4 teaspoon ground nutmeg

  10. salt; pepper

  11. Peel the potatoes. Rinse and wipe them; and cut into very thin

  12. slices. Heat the milk with the nutmeg to just below boiling;

  13. allow to cool. In a bowl; beat the eggs and cream together. Add

  14. the salt and pepper. Gradually pour the lukewarm milk into the bowl

  15. while stirring. Rub the inside of a gratin dish with the garlic

  16. clove; then spread butter over it. Alternate layers of potatoes,

  17. cream mixture and grated cheese. Finish with a layer of cheese.

  18. 350F preheated oven for 1 hour or until tender.
