  1. 175g butter

  2. 175g soft light brown sugar

  3. 125g golden syrup

  4. 350g rolled oats

  5. 150g sultanas

  6. 100g chopped dried apricots

  7. 2 teaspoons ground cinnamon

  8. 1 orange - rind grated/zested

  1. Preheat the oven to 180 C / Gas 4. Line or grease a 16x26cm baking tin.

  2. Melt butter, sugar and golden syrup in a pan over a low heat. stir occasionally.

  3. Meanwhile mix the remaining ingredients in a large bowl.

  4. Pour the butter mixture into the dry ingredients and combine. Gently press into the prepared tin.

  5. Bake for 25-30 mintues - until mixtures starts to brown at the edges.

  6. Cool for 10 minutes then cut into rows of 4 x 6.

  7. When completely cooled remove from the tin and store in an aritight container.
