  1. 8 pounds red or white potato

  2. 2/3 cup unsalted butter

  3. 2/3 cup flour

  4. 6 cups milk

  5. 3 tablespoons garlic

  6. 2 teaspoons kosher salt

  7. 1/2 teaspoon black pepper

  8. 1/4 teaspoon cayenne

  9. 2 tablespoons unsalted butter

  10. 4 cups sharp cheddar cheese

  1. Preparation : cook potatoes in boiling salted water for 15-20 minutes, until tender drain well and allow to cool slightly peel potatoes and cut to 1/2-inch dice, set aside heat butter in a saucepan, over a medium flame whisk in flour, heat and stir for 2 minutes whisk in milk heat and whisk until thickened stir in garlic, salt, black pepper, and cayenne heat over a low flame for 10 minutes, stirring occaisionally stir in all but 1/2 cup of the grated cheese heat and stir until melted add cheese sauce to potatoes-mix well turn potatoes into shallow baking dishes top with grated cheese dot with melted butter bake @ 475 degrees for 15-25 minutes, until slightly browned serve hot
