  1. 2 cups 125g / 4.4oz Finely-chopped seeded tomatoes

  2. 1/2 cup 73g / 2.6oz Finely-diced smoked mozzarella

  3. 1/4 cup 10g / 0.4oz Finely-shredded arugula leaves

  4. 6 Bacon - cooked until crisp,

  5. 1/4 cup 15g / 1/2oz Finely-chopped sweet onion

  6. 2 tablespoons 30ml Olive oil

  7. 2 teaspoons 10ml Balsamic vinegar

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  10. 24 Outer bibb lettuce leaves (abt 4 heads) - washed, patted dry

  1. In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste. Spoon mixture into lettuce leaves and serve immediately.
