  1. 2 teaspoon(s) olive oil

  2. 1 pound(s) turkey cutlets

  3. 1/2 teaspoon(s) salt

  4. 1/4 teaspoon(s) coarsely ground black pepper

  5. 1/3 cup(s) orange marmalade

  6. 2 tablespoon(s) red wine vinegar

  7. 1 tablespoon(s) grated, peeled fresh ginger

  8. 1 small navel orange , cut into wedges

  9. Parsley sprig , for garnish

  1. In nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add turkey cutlets; sprinkle with salt and pepper. Cook cutlets until they are lightly browned on the outside and just lose their pink color on the inside, about 2 minutes per side, turning once.

  2. Meanwhile, in small bowl, combine marmalade, vinegar, and ginger.

  3. Add mixture to turkey cutlets in skillet; heat to boiling. Garnish with orange wedges and parsley to serve.
