  1. 2 bunches collard greens, washed

  2. 1/2 recipe of Fried Rice ñ see link

  3. 1/2 cup jarred tomato salsa

  1. Select 24 of the best-looking whole collard leaves and carefully cut off their stems. Place in a steamer tray and steam for 4 minutes. Transfer the cooked leaves to a plate.

  2. To assemble: Lay out a cooked collard leaf. Vein side up. Place 1/4 cup of the fried rice in the center, drop 1 teaspoon of salsa on top of the rice. Fold the stem end of the leaf over the rice. Fold in the two sides and roll the bundle, firmly enclosing the rice. Repeat with the remaining leaves. Steam for 5 minutes to heat through.
