  1. Orange-Poppy Seed Cake

  2. 1 cup plus 4 tablespoons unsalted butter, softened

  3. 2 cups granulated sugar

  4. 1 tablespoon freshly grated orange peel

  5. 4 teaspoons baking powder

  6. 1/2 teaspoon baking soda

  7. 1/2 teaspoon salt

  8. 4 large eggs

  9. 1/4 cup poppy seeds

  10. 3 1/2 cups all-purpose flour

  11. 1 1/3 cups buttermilk or plain low-fat yogurt

  12. 1/2 cup orange juice

  13. 1/3 cup granulated sugar

  14. 1/2 cup unsalted butter, softened

  15. 16 ounces cream cheese

  16. 2 teaspoons vanilla extract

  17. 4 cups confectioner's sugar

  18. 350 F. Lightly grease and flour two

  19. 9x2-inch round

  20. cake pans. Tap out excess flour.

  21. In a large bowl with an electric mixer on high speed, beat butter,

  22. sugar, orange peel, baking powder, baking soda and salt until pale

  23. and fluffy, about 3 minutes. Add eggs one at a time, beating well

  24. after each. Beat in poppy seeds until blended. Reduce speed to

  25. low and beat in half the flour, all the buttermilk, then the

  26. remaining flour just until blended. Divide batter between prepared

  27. pans and spread evenly. Bake, switching position of pans halfway

  28. 45 to 50 minutes or until a wooden pick inserted

  29. in center comes out clean. Cool in pans on a wire rack 10 minutes

  30. before inverting cakes on rack. Poke holes with a toothpick, about 1 to 2 inch intervals.

  31. Stir orange juice and sugar until sugar dissolves. Spoon a tablespoon

  32. at a time over warm layers. Let cool completely.

  33. Beat butter, cream cheese, and vanilla in a large bowl on medium

  34. speed until blended. Reduce speed to low and beat in confectioners'

  35. sugar until blended.

  36. Place 1 cake layer, smooth side up, on a serving plate. Spread

  37. top with 1 cup frosting. Top with second cake layer, smooth side

  38. up. Spread remaining frosting over top and sides. Up to 2 hours

  39. before serving, decorate cake with sugar roses and leaves. Leave

  40. at room temperature.
