  1. 1 Cube bouillon

  2. 4 lb Fresh pumpkin, peeled,

  3. -seeded, cooked

  4. 2 c Water

  5. 2 c Half and half

  6. 2 tb Molasses

  7. 1 tb Butter

  8. 1/8 ts Ground ginger

  9. 1/4 ts Nutmeg

  10. 1/2 c Fresh parsley, chopped

  1. Chopped mint for garnish Make broth with bouillon. Cut pumpkin into 1′ cubes and place in broth.

  2. Simmer for 5 minutes, then puree in blender. Return puree to heat; add half and half and molasses. Add butter, ginger and nutmeg; simmer for 10 minutes. Add parsley; simmer for 10 minutes more. Serve with fresh chopped mint on top.

  3. Serves 6.
