  1. 3/4 cup 120g / 4 1/5oz Brown rice -see note

  2. 1 2/3 cups 104g / 3.7oz Liquid -

  4. 1 teaspoon 5ml Curry powder

  5. 1/4 teaspoon 1 1/3ml Red pepper flakes

  6. 3 teaspoons 15ml Carrots - sliced (small)

  7. 1 Celery - chopped

  8. 1 Leek or onion - chopped - (small)

  9. (mostly white part)

  10. 1 cup 146g / 5.1oz Fresh kale - chopped

  11. 1/2 cup 73g / 2.6oz Fresh mushrooms - chopped

  12. 5 oz 142g Cooked chicken or turkey --

  13. 2/3 cup 157ml Frozen peas

  1. * (use white if you prefer, but since it doesn't take as long to cook, you may want to cook the vegetables a bit before adding the rice.)

  2. Put rice and liquid in a medium saucepan and bring to a boil. Add curry, pepper flakes, carrots, celery, leek, kale and mushrooms.

  3. Return to a boil, reduce heat, cover and simmer for 35-40 minutes, or until most of the liquid is absorbed. Add meat and peas, and cook another 5 minutes.

  4. Serve. This served 2 very (!) hungry adults.

  5. You could probably stretch it to 3 by adding a bit more rice and liquid Recipe By: herl jennifer
