  5. 8 Ears of fresh corn

  6. With shucks on

  7. 1/2 ts Salt

  8. 1/2 ts Fresh ground black pepper

  9. 3 tb Butter

  10. 1 ts Sugar

  11. 1 Onion chopped

  12. 1/4 c Milk (evaporated is best)

  13. 1 Tomato peeled, seeded,

  14. & chopped

  15. 2 Eggs beaten

  16. Cut corn off of the cobs. Save cobs & husks! Take the

  17. largest husks, put into a pan of boiling water to

  18. soften. Heat the butter in a pan, add the onion, &

  19. cook til soft. Add the tomato, salt & pepper, & sugar

  20. and cook for 5-6 minutes. Add the corn, milk, & eggs

  21. and cook for 10 minutes. Stir constantly while this

  22. step is in progress. Remove the husks from the water

  23. and dry. Place 3 Tblspns of the corn mixture on the

  24. center of each husk. Fold the sides of the husks over

  25. 2 leaves if you need to

  26. do so) tie with string. Place cobs in the bottom of

  27. the pot of boiling water and place the humitas on top

  28. of the cobs. Cover pot for 30 minutes. Serve hot!

  29. I like to add a bit of garlic to mine. I also use the

  30. Sriracha or Tuong hot sauce too! --
