  1. For The Dressing

  2. 1/2 Lime or lemon - juiced

  3. 1 teaspoon 5ml Whole-grain mustard

  4. 1 tablespoon 15ml White wine vinegar

  5. 1 teaspoon 5ml Sugar

  6. 1/4 cup 59ml Extra-virgin olive oil

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  9. For The Salad

  10. 1 Palm hearts - (14 to 15 oz) - drained, and Sliced crosswise 2 Ripe mangoes - peeled, sliced thin

  11. 2 Ripe avocados (or 1 large) - peeled, stoned,

  12. And thinly sliced 1/2 Cucumber - peeled, sliced thin

  13. 1/2 Scotch bonnet - seeded, chopped fine

  14. (or other hot chile pepper)

  15. 1/2 Lime or lemon - to be squeezed on

  16. Avocado to prevent discolouring

  1. To make the dressing: Mix the first 4 ingredients and then drizzle olive oil in slowly while stirring constantly. Season with salt and pepper, to taste.

  2. Assemble all the salad ingredients in a bowl and serve the dressing on the side.

  3. This recipe yields 6 servings.
