  2. SOURDOUGH APPLESAUCE CAKE

  7. 1/2 cup Shortening

  8. 2 cups Sugar

  9. 2 Eggs

  10. 1 1/2 cups Sourdough starter

  11. 1 1/2 cups Applesauce

  12. 1/2 teaspoon Cloves

  13. 1 teaspoon Cinnamon

  14. 1/2 teaspoon Allspice

  15. 1 1/2 teaspoons Salt

  16. 1 1/2 teaspoons Baking soda

  17. 2 tablespoons Sugar

  18. 2 cups Flour

  19. 1/2 cup Chopped nuts

  20. 1 cup Raisins -- ICING:

  21. 1 cup Butter -- softened

  22. 2 cups Confectioners' sugar

  23. 1 Egg yolk

  24. Maple flavoring -- to taste

  25. 1/2 cup Whipping cream

  26. 1 teaspoon Sugar

  27. For cake, cream together shortening and sugar; beat eggs. Stir in starter,

  28. applesauce, cloves, cinnamon and allspice. Set aside. In small bowl, blend

  29. salt, baking soda and sugar. Sprinkle over batter; stir in gently. Add flour;

  30. stir until smooth. Add nuts and raisins; stir well. Pour into two

  31. 9-inch round cake pans. Bake at

  32. 350 degrees for 25 to

  33. minutes or until wooden pick inserted in center comes our clean. Cool in pans

  34. for 10 min.; remove from pans and complete cooling on wire racks. To make

  35. icing, combine butter, sugar and egg yolk; mix well.

  36. Add flavoring; set aside. Whip cream with 1 teaspoon sugar; fold into icing.

  37. Frost cake.
