  1. 3/4 c Butter; slightly softened

  2. 2/3 c Granulated sugar

  3. 2 lg Egg yolks

  4. 1 1/4 ts Vanilla extract

  5. 1/4 c White cornmeal

  6. 1 3/4 c Flour

  7. 3 tb Pine nuts; i substitute

  8. 2 minutes. If dough seems too soft to shape with hands, add a couple more tablespoons of flour, but no more than necessary. Roll into 1-inch balls. Place

  9. 1 1/2-inches apart on greased baking sheet. Gently press each ball into a

  10. 1 3/4-inch disc. Imbed three pine nuts in a spoke like pattern with narrow ends toward center. Bake

  11. 14-16 minutes in

  12. 3-4 minutes before removing from sheets. Makes

  13. 35, 2-inch cookies. --
