  1. 500 grams elbow macaroni

  2. 1 large chicken breast , boiled and shredded

  3. 1 cup boiled, diced carrots

  4. 1 cup raisins

  5. 1 cup diced sweet ham

  6. 1 cup frozen peas

  7. 1 cup pineapple chunks

  8. 1/2 cup diced red capsicum

  9. 3 cups mayonnaise or any low-cal equivalent (adjust to suit taste)

  10. dash of salt and pepper

  1. Boil macaroni according to package instructions. Drain and set aside.

  2. In a large bowl, mix all the ingredients then season to taste.

  3. Chill for at least 1 hour before serving.
