  1. 2 cups all-purpose flour

  2. 1/2 cup granulated sugar

  3. 1 tablespoon baking powder

  4. 1/2 teaspoon salt

  5. 2 large eggs

  6. 1/2 cup vegetable oil

  7. 1/2 cup milk

  8. 1/2 cup apricot jam

  1. In a medium bowl, stir together flour, sugar, baking powder, salt, eggs, oil, and milk until just moistened.

  2. Spoon into greased muffin tins 2/3 full and make a slight indentation in the center of each. Spoon 1/2 to 1 teaspoon of jam into each indentation.

  3. Bake for 15 to 20 minutes in a 400°F (205°C) oven. Remove from oven. Cool on a wire rack.
