  1. 1 1/2 cups 219g / 7.7oz Bread crumbs

  2. 2 Eggs

  3. 1/2 cup 73g / 2.6oz Kefalotiri cheese - grated or 1/2 cup 73g / 2.6oz Parmesan cheese - grated

  4. 1 tablespoon 15ml Baking powder

  5. 2 tablespoons 30ml Parsley - chopped

  6. 1 teaspoon 5ml Onion - chopped Salt and pepper to taste

  1. Recipe Instructions Wash the eggplants and pierce in several places with a fork. Boil in lightly salted water until tender; drain well. Remove skin and mash the pulp; measure it. Mix 2 cup of eggplant pulp with the amount of ingredients listed above and blend well. Shape into croquettes or patties. Roll in cracker meal, and fry until golden brown.
