  1. 2 lbs 908g / 32oz Unpeeled medium-size fresh shrimp

  2. 1 cup 62g / 2 1/5oz All-purpose flour

  3. 1 1/2 teaspoons 7 1/2ml Baking powder

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 2/3 cup 157ml Water

  6. 2 tablespoons 30ml Lemon juice

  7. 1 tablespoon 15ml Vegetable oil

  8. 1 tablespoon 15ml Egg - lightly beaten (large)

  9. Vegetable oil - for frying

  1. Peel shrimp, leaving trails intact; devein, if desired. Combine flour, baking powder, and salt in a medium bowl. Add water and next 3 ingredients; stir until smooth.

  2. Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip shrimp into batter, and fry, a few at a time, until golden. Drain on paper towels.

  3. This recipe yields 4 servings.
