  1. 1-1/3 cups all-purpose flour

  2. 1/3 cup sugar

  3. 1 teaspoon baking soda

  4. 1/2 teaspoon salt

  5. 1 egg

  6. 1 cup buttermilk

  7. 1/4 cup vegetable oil

  8. 1 teaspoon vanilla extract

  9. 1 cup granola without raisins

  10. 1/2 cup chopped almonds

  11. 1/2 cup semisweet chocolate chips

  12. 1/2 cup chopped red candied cherries

  1. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, whisk the egg, buttermilk, oil and vanilla. Stir into dry ingredients just until moistened. Fold in the remaining ingredients. Pour into two greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 mini loaves (5 slices each).
