  2. Macaroni and Cheese Like a Greek Salad

  7. 1/4 pound macaroni

  8. 1 1/2 tablespoons fruity olive oil

  9. 1 tablespoon wine viinegar

  10. 2 ounces feta cheese

  11. 4 or 5 Kalamata or other Greek olives -- pitted and quartered

  12. 1/2 teaspoon dried oregano

  13. freshly ground pepper -- to taste

  14. Cook macaroni till tender.

  15. Drain well.

  16. Transfer to a mixing bowl and toss immediately with the olive oil.

  17. Add vinegar and toss again.

  18. Add the feta, olives, oregano, and pepper.

  19. (Additional salt pby not necessary because of feta.)

  20. Toss again.

  21. Serve hot or at room temperature.
