  1. 1-pound okra, cut up

  2. 1 large onion, chunked

  3. 1 clove garlic, diced

  4. 4 slices of bacon

  5. 1-cup rice, uncooked

  6. 1 1/2 cup water

  7. Salt & Pepper to taste

  1. Fry bacon in bottom of heavy bottomed, deep pot. Remove from pan adding onions & garlic until onions are almost clear. Add okra & cook until mostly tender. Add crumbled bacon & water & bring to a boil. Add rice, then cover with a tight fitting lid & reduce heat to low, & simmer for 45 minutes to one hour, never lifting the lid.

  2. *Variations are: Turkey Neck (I add the thigh & leg meat too), Chicken, Sausage, Smoked link, Little Smokies, or bulk sausage, hamburger, shrimp, oyster, crab, & etc… if it is meat, it can be added to a Pilau. **

  3. **Substitute okra for your meat choice,** cook as directed above, this serves 2 people well, however to feed my family of 4 I double the ingredients. {*When using meat, I add the following spices*}: 1 tsp. Cajun or Creole seasoning, ¼ tsp. oregano, ¼ tsp. Basil & 2 bay leaves or 1 large. Add seasonings while I sauté the onions & garlic. {I usually do shrimp & sausage together, using the Little Smokies} or {Oysters & bulk sausage;(Browned ahead & drained of grease)} and so on, mixing up the meats, changes the flavor and makes the dishes more interesting, I have found.
