  2. REDUCED-FAT MACARONI & CHEESE

  6. 8 oz Macaroni, elbow twists

  7. 16 oz Cottage cheese, low-fat 1%

  8. 2 tb Flour, all-purpose

  9. 2 c Skim milk

  10. 4 oz Cheese, sharp cheddar shred

  11. 1 t Salt

  12. 1/4 ts Pepper, ground black

  13. 1/4 ts Nutmeg ground

  14. 1/4 c Cheese, parmesan grated

  15. "They'll never know we sneaked out 10 grams of fat per

  16. serving because this macaroni and cheese is as good as

  17. even BETTER than - the old-favorite recipe."

  18. Beginning about 45 minutes before serving:

  19. 1. Prepare macaroni as label directs but do not add

  20. 2. Preheat oven to

  21. 375 degrees

  22. F. Spray shallow, broiler-safe, 2

  23. 1/2-quart casserole with nonstick cooking spray.

  24. 3. In food processor with knife blade attached, blend

  25. cottage cheese

  26. until smooth. (Or, in blender at high speed,

  27. blend cottage cheese with

  28. 1/4 cup of the milk called for in recipe, for 4. In 2-quart saucepan, mix flour

  29. with 1/4 cup milk until smooth. Slowly

  30. stir in remaining cups milk until blended. Cook

  31. over medium heat until

  32. mixture just boils and thickens slightly, stirring

  33. frequently. Remove

  34. saucepan from heat; stir in cottage cheese,

  35. Cheddar, salt, pepper and nutmeg. 5. Place macaroni in casserole; cover with

  36. cheese sauce. Bake,

  37. 20 minutes.

  38. 6. Remove casserole from

  39. oven. Turn oven control to broil. Sprinkle

  40. Parmesan cheese on top of macaroni mixture. 7.

  41. Place casserole in broiler at closest position to

  42. source of heat;

  43. 2 to 3 minutes until top is golden brown.
