  1. 1 can College Inn ® Beef Broth 99% Fat Free

  2. 1 lb. boneless beef sirloin cut into cubes

  3. 2 Tbsp. vegetable oil divided

  4. 1 cup onions chopped

  5. 1 cup carrots chopped

  6. 1 rutabaga diced (medium)

  7. 1 bay leaf

  8. 1/2 tsp. thyme

  9. 3/4 cup quick-cooking barley

  10. 1 cup cabbage chopped

  1. Directions 1. In large saucepot or Dutch oven, brown beef in 1 tablespoon oil; remove.

  2. Cook onions, carrots and rutabaga in remaining tablespoon oil about 3 to 4 minutes, until tender-crisp, stirring occasionally.

  3. Return beef to pot; add broth, bay leaf and thyme. Cover; simmer 25 minutes, or until beef is tender.

  4. Stir in barley and cabbage. Cook 10 to 12 minutes, until barley is cooked. +
