  1. 2 medium plantains

  2. 2 tablespoon(s) vegetable oil , canola works best

  3. 1 tablespoon(s) butter , per plantain

  4. 1 cup(s) shredded cheese , Queso Blanco (Tropical brand) or another white cheese such as Monterey Jack

  1. Preheat oven to 350°F. Cut off the ends of each plantain and remove the peel leaving the body of the plantain in tact.

  2. Place the plantains in a shallow glass dish (8 x8 or 9x9 square) and rub them in the vegetable oil. To make sure that the plantains do not stick, lightly coat the dish with vegetable oil or cooking spray.

  3. Place plantains in the oven for about one hour or until golden color.

  4. Once ready, remove from oven, split open and immediately add butter followed by cheese so that the cheese begins to melt. Serve immediately.
